the people who inspire…


For whatever reason, I’ve been extremely sentimental lately.  I’ve always cherished my relationships but lately have spent a lot of time thinking about my friends and how lucky I am to have them in my life.  And no, it was not a result of all that ‘rapture’ talk the other week.  Honestly, I think approaching and turning forty really made me take stock of things – really evaluate who and what was truly important. Family and friends first…always!  I’m sure that each of us has a small group of people we consider our ‘inner circle’ and an even smaller group we know would set aside anything if we called them in a time of need, even if it was 3 a.m. and required cross-country travel.  Beyond the obvious, my parents, grandma and Goldfarb, I can literally count those people on one hand.  They are, in no uncertain terms, my lifeline. But I’m blessed. There is another group that has left indelible marks on my life, changing it forever.  It’s my grade school teacher Mrs. Himmelspach who always expected more of me, more than even I thought I could possibly deliver.  She taught me to try harder and expect more of myself.  It’s my high school track coach and biology teacher Ms. Wosepka who constantly challenged me to put in the proper amount of time to be better and not slack off; to not take things and talents for granted.  It’s my college teacher Mr. Henderson who encouraged me to write more and to find a voice.  It’s my longtime friends SuLee and Jeff who inspire me to love deeper, give greater and constantly strive to be a better person.  
I’ve been talking a lot recently about running and working out. I’ve announced that it’s time to get serious about my training and have taken steps to accomplish this goal.  But why, especially since I’ve been running for a few years now?  For those who know me well, they might think it’s because I’m hyper competitive.  That’s only 50% of it.  The other 50% is because of a girlfriend who, absolutely, has changed my life.  She is one of the most inspirational people I’ve ever encountered. We met while working with a charity we both love and became friends. I was so honored to be invited to her wedding only to be heartbroken and shocked when weeks before the ceremony her fiance died as a result of a vicious attack that my girlfriend survived.  But ‘surviving,’ as a word, does not begin to describe her.  When most people would become defined by the tragedy, her long-held outlook on life allowed her to take the deep pain and hurt and turn it into a reason to remain strong and, unbelievably, help others.  I think it would take about 1,000 more words to accurately describe her to you – so let me bottom line this.  She is an incredibly loving, giving and motivating individual.  
Right now, as I write this, she is taking time to do something for herself.  She gives so much time, energy, talent and resources to help others that it almost seems unlike her to take time for herself.  Which is even more reason why I am so excited she’s embarked on a five week journey to learn to live more healthfully.  She is doing an intensive program that is, to me, physically unbelievable.  I read her blog posts about her daily workout routine and I’m left both exhausted and energized. Her daily digests, photos, meals and recipes are fab!  This is a great mango smoothie recipe she shared with us her first week.  Through her endeavor, I’ve been inspired to push myself harder; to do the work that is required to not only be more physically fit but to get stronger and faster.  Thus, the trainer, the boot camp, the 5 day-a-week workout schedule, the addition of more races.  Thank you, my dear friend, for not only inspiring me push further but for teaching me deeper understanding, greater patience, and showing me that the world’s negatives are always, always, outweighed by good and love.
Mango Smoothie
serves 4
3 cups mangoes, diced
1/2 cup plain Greek yogurt
1 banana, sliced
1 cup apple juice, no sugar added
1 tsp. pure vanilla extract
1 tbsp. honey {I used agave nectar}
1 tsp. cinnamon  {I used Vietnamese cinnamon – yum!}
strawberries + mint for garnish
In a blender combine all ingredients except strawberries and mint. I used frozen mangoes because that is what I had on hand – if you use fresh, add 1 cup of ice.  Pulse until smooth.  Pour into four glasses and garnish with strawberries and mint. 
14 calories / 4 g protein / 32 g carbs / 4 g fiber

musings from an under-the-weather gal


Under-the-weather? That’s an understatement.  Heck, I’m S.I.C.K.  Again!  Cold number three is almost gone but it’s still lingering around enough that running a couple of errands has wiped me of my energy.  I never used to sick, at least never this much, maybe once a year a really bad cold would rear its ugly head.  This year I’ve been hit three times and all three were lay-around-in-bed, energy-zapping, prolonged colds.  Yuck!  Here’s what I was thinking about last night as I sat in bed playing what seemed like the hundredth game of scarab solitaire in the last four days on my iPad:
Never underestimate the power of chicken soup.  My favorite is pho, but since this isn’t N.Y. – so no delivery – and the first day of this cold there was no way I could leave the house during the day, an old-fashioned can of Campbell’s works just fine.  {note about the link – I’m too tired to write down the recipe from the Momofuku cookbook but why should I?  Here it is in a blog by someone who is more obsessed with the book than me. Enjoy!}
Vaporub on the soles of your feet?  Okay, I don’t know who thought this up and I’m pretty sure there is no clinical data showing this actually helps to relieve coughing but I do it anyway, cream not the ointment.  I confess, I kind of just like the smell.  But only because it conjures up childhood memories of my grandma rubbing it on my chest and then snuggling between her and grandpa in bed and watching t.v. underneath a pile of soft warm blankets. It was safe and comforting – that’s good enough for me.
Yes, you can stay in pajamas all day!  But after a while even the truest, die-hard pj-lover gets sick of it and you put on regular clothes {okay sweats} just to pretend that you are among the living.
You know you’re in a bad way when you dog’s hair looks way better than yours.
At the first hint of a cold, bypass the ‘Tussin and go straight for a shot of whisky.  It is my go-to-cough syrup, cold remedy.  And I think it works every time to kill some of those nasty germs.  Why get bogged down in all that awful syrupy sugar?   Sorry Chris Rock, but it’s whisky over ‘Tussin all the time here.
Tea, tea, tea!  Chamomile and mint, together.  Trust me, it’s good and soothing.
Thank goodness for the neti pot.  Get over the squeamishness of running saline water through your nasal passages…this is the best $10 I’ve ever spent.  I haven’t had a sinus infection in years and they were pretty common place around my house forever as a result of awful seasonal allergies.  No more sinus infections, I don’t take medicine for hay fever that used to knock me out – seriously leave me useless – and I swear it helps shorten the length of a cold, especially alleviating a lot of congestion. 
I’ve discovered the cure for Angry Birds: an achy all-over body cold. 
The best thing to have around when you’re sick is a furry friend.  Especially of the canine persuasion – they can’t take care of themselves like a cat.  You’re forced to get out of bed and walk them.  Good for the dog, good for the sickie.  Then you can come back and nap with your warm companion who just looks at you and thinks, “pathetic” but loves you anyway.
For the love of God, get a flu shot!
And…the next time Goldfarb comes home from work sick, he’s immediately quarantined to the guest bedroom.

meatless mondays . #21 {onion soup}

It’s Goldfarb’s turn with the spring cold so decided to have another soup and salad night.  Made this very flavorful onion soup which I adapted from Ross Dobson’s Market Vegetable cookbook.  Paired with a bib lettuce salad of tomatoes, avocados and vinaigrette we were both completely stuffed after dinner.  Never let anyone tell you soup can’t be a meal!

Onion Soup w/Gruyère Toasts
serves 4

3 tbsp. unsalted butter
1 ½ lbs. sweet onions, thinly sliced
1 ½ lbs. yellow onions, thinly sliced
4 cloves of garlic, thinly sliced
5 cups vegetable stock
1 ½ cups hard cider
3 sprigs fresh thyme
2 tsp. salt
¼ tsp. white pepper
2 egg yolks
4-8 slices of baguette
6 oz.  Gruyère cheese, thinly sliced

In a thick-bottom soup pot, melt the butter of over medium heat.  Add the onions and garlic; cook for 20 minutes stirring often so the onions softened but don’t brown or burn.  Add the stock, cider and thyme.  Bring to a boil then reduce heat to low.  Cook for 40 minutes stirring occasionally.  Remove from heat and slowly whisk in the egg yolks.  Cover and keep warm.

Preheat your broiler to high.  Toast bread on one side until light golden brown. Flip, place cheese on top and return to broiler.  Cook until the cheese is golden brown and bubbling.  Remove from oven.  Ladle soup into bowls and top with the toasts.
