grilled peach + fig yogurt

For whatever reason, I’ve been waking up at the crack of dawn lately. Considering insomnia constantly plagues me, this is a bad combination. So to ward off a mid morning energy plummet an early breakfast is usually in order, followed a few hours later with a morning snack. It’s fig season – yeah! I love figs.  Really.  I love peeling them and popping them as a snack.  Love them with gooey cheese, in salads, covered with chocolate and they are one of the only fruits I like cooked with savory entrees.  Had some beautiful Brown Turkey figs sitting on the counter and a lonely but lovely Frog Hollow peach.  Decided to grill both to have with some yogurt. Have no fear…I did not subject my neighbors to a morning horror show by grilling the fruit outdoors in my pjs. Used a grill pan and it worked just perfectly.  Simple, fresh ingredients for a breakfast that came together in under 5 minutes.  Just wish I had had a little granola to sprinkle over the yogurt but you work with whatcha got, and in this case, it was caramelized, sweet goodness.

Grilled Peach + Fig Yogurt
serves 4

2 figs {variety of your choice}
1 small peach
1 tbsp. canola oil
1 cup plain Greek yogurt
1 tbsp. light brown sugar

Cut figs into quarters and brush each side with oil. Cut peach in half, remove pit and cut each half into 4 wedges; brush each side with oil. Heat a grill or grill pan and cook sear fruit on each side over medium-high heat for 60 seconds on each side. Remove and let cool slightly. Divide yogurt into 4 bowls. Place 2 slices of fig and 2 slices of peach over each of the yogurts and sprinkle with brown sugar while still warm.
