week in review
Every year, it seems like the second week of June is jam-packed with activities. I think it’s because schools are getting out, the weather is nice, and it’s kind of the start of racing season. This year, it was especially busy. It’s no wonder that I was crashing hard yesterday. But I rallied to make three parties, including the graduation open house for Emilie, a wonderful young lady I’ve known since the day she was born. To tell you that she has grown into a remarkable person would be a huge understatement. She is incredibly smart, driven and just a stellar human being. It’s been fun to hear about all of her Robotics activities and how she has excelled at them. She’ll be going to the Illinois Institute of Technology in the fall on scholarships and grants. Yes, folks, she is that talented! What I love most about Em is that she has an incredibly kind heart, cares so deeply for her friends and family, and follows her passions. Knock ’em dead, Emilie. I know there are many, many wonderful things in store for you.
Here’s a peak at last week:
I was so thrilled to be able to see Italian glass blower Maestro Lino Tagliapietra at the Museum of Glass in Tacoma, where he was completing a week-long visiting artist program. His work is stunningly beautiful and so vibrant, Dale Chihuly refers to him as “perhaps the world’s greatest living glassblower.” I especially love his pieces where the glass canes are well defined and swirled into soft, fluid patterns. Each year, Tagliapietra generously donates a work of art to the JDRF Seattle Guild Gala. And each year, his glass piece is one of the highest selling live auction items. We are so lucky to receive his gifts. If you look at the picture above closely, you’ll see a multi-colored glass case with the scissors. That’s right…his safety glasses are Missoni. Pure Italian style! Can’t wait to see what piece, blown this week, will become part of the Museum’s permanent collection.
Boxed for the first time with my trainer Jody. Punched that bag so hard my shoulders hurt for days. But I loved it. I am now the proud owner of my very own pair of boxing gloves. Bring it!
Ran Race for the Cure on Sunday, skipped Sound to Narrows on Saturday. Yep. Missed another race…that makes three this year. Nearly broke my big toe two weekends ago. Told you. I’m clumsy. Monday’s visit to Virginia Mason’s Sports Clinic {where sadly, the x-ray tech now knows me by name} discovered no breaks or tears, just a serious case of turf toe. Turf toe? Sounds horrid. It is. But I am bound and determined to run the Rock and Roll Half at the end of the month! It is going to be one sad, ugly race but someone’s promised me champagne at the end, so of course I’m running!
Celebrated my dad’s birthday with dinner at Tavolata, for another Sunday Feast. This time it was prime rib. So good. If you can, you should really try to get to one of their monthly Sunday dinners. They’re really great and you will leave full, satisfied and definitely, not disappointed. Personally, I’m looking forward to September’s suckling pig!
Introduced some people last night to my version of the Manhattan. You know you’re at a good party when the hosts’ bar has Woodford Reserve and Antica Formula!
Saw many, many special friends this week for dinner, parties, special celebrations and coffee. Blessed to have such great people in my life.
Cried so hard it hurt; laughed so hard I snorted.
And throughout the week, was reminded that good and love ALWAYS triumphs over evil.
meatless monday . #23 {lemon spaghetti}
The last several months I’ve seen about three different bloggers post recipes for lemon pasta. Then I saw recipes in a couple of magazines and Gwyneth Paltrow’s cookbook. Thought I would see what all the fuss was about. Did a little research and it turns out different people have very different ways of making this dish. Some heat the sauce, some use cream, some use lots of zest, some throw in blanched vegetables. Here’s my version with some arugula thrown in. Had some leftover from a few days ago I needed to use up. The peppery flavor worked really well with the lemon and basil. I really liked the fact that this is such a quick meal to make. In the amount of time it takes to heat the pasta water and cook the spaghetti, you can make the sauce and still have time to make a salad {tonight, for us, it was Mike’s favorite, caprese with my twist – fresh avocado slices}. And it was very flavorful…much more than I thought it would be. It’s such a nice, light summery dish that I think kids would really like, too. You can make this with any long noodle – capellini, linguini, bucatini. I think spaghetti is just the right thickness, though. If you want a dinner with more protein, this would be excellent topped with a pan seared boneless, skinless chicken breast!
Lemon Spaghetti
serves 4
1 lb. spaghetti
zest of 1 lemon
½ cup fresh lemon juice {about 3 lemons}
6 tbsp. extra virgin olive oil
1 garlic clove, finely minced
3/4 cup grated parmesan
kosher salt
fresh ground pepper
1/3 cup basil leaves, finely chopped
1 ½ cup baby arugula
Bring a pot of salted water to a boil. Add spaghetti noodles and cook until al dente, about 7 minutes. While pasta is cooking, add 1 tbsp. of olive oil to a small sauté pan and cook garlic over medium heat until fragrant, about 60 seconds. In a separate bowl, whisk lemon juice, zest, remaining olive oil and garlic. Stir in the parmesan; salt and pepper to taste. Reserve 1 cup of pasta water then drain the noodles, returning them to the pot {off the heat}. Add the lemon sauce to the noodles and toss to coat, adding a little reserved pasta cooking water if needed to keep the noodles well sauced. Toss in the basil and arugula; serve.

happy birthday dad!
We had a great dinner with my parents last night to celebrate my dad’s birthday. He was born on D Day. Not an anniversary of but the actual day. Seems a little fitting since I come from a large extended family of men and women who have been called to military service, including my dad who was in the Air Force. Unlike many other military families, we were fortunate to only move twice, once to the Philippines and once to Sacramento. But those moves filled my life with some life-long friendships and great memories. Some of my favorites – visiting my dad on base and looking at the planes and parts. But I also loved when my dad would come visit me at school. The most memorable being one Thanksgiving, back when school kids could celebrate that holiday and not have to call it a Harvest Festival. We had worked really hard all week to make hats for our parents. I loved, that without missing a beat, by dad proudly donned his Indian headband and sat cross-legged on the floor next to me for the whole party.
When we lived in Sacramento we explored a lot. One of my favorite day trips was to Sutter’s Fort. It came during a time in school when we were learning about the Gold Rush and missions throughout the state. Touring the grounds was really fun but the best part of that day was sitting on a huge rock with many rounded, bowl-like divots pretending to work – it was a boulder that the women once used to grind corn. I think if you asked most adults they would tell you some of their favorite memories are simple ones; ones that are meaningful not necessarily because of location or events but because they were spent with family and/or friends just having fun being together. That is true for me.
My dad has always been my number one fan. Always supporting me and the things I’ve wanted to do. He’s my biggest cheerleader and always the first to tell me, “Good job!” I talk to my parents often throughout the week. I enjoy sharing even the most mundane parts of my day with them, laughing about anything and everything, and just having them call to tell me they love me.
Happy birthday, Dad! You’re the best!
