snap 365 {the outtakes}

The close of 2011 meant the end of my year-long picture-a-day project.
While some days it was a challenge to find one thing to photograph, most days were easy and interesting.
Not all the pictures were great; some were silly or even a little boring but this endeavor taught me two things:1] to look up, down, around, under…basically everywhere to discover what’s around me and
2] there is beauty in and something interesting about everything. Here are some of the outtakes from
the year that were either cast aside because the lighting was wrong, image was blurry or not photographed
they way I would have liked or simply because another image taken that day was more powerful.
Here’s to the magic that photography captures.

Mostly because three have to do with running, which as most of you know by now, I have strong dislike {trying not to use the word hate} for and only do to keep from getting tubby. meatless . #52 {forager’s omelette}

Breakfast for dinner…this is the post I saved as a draft  to finish writing while we were on vacation. The sign of a great trip is that I never finished the post. So here it is. The last regular meatless meal entry. I’m not a big breakfast person and don’t often eat omelettes anymore but I do love this one. Thing I like about having breakfast for dinner is that it’s quick and easy. And this forager’s omelette is so yummy. The one tablespoon of Boursin cheese per omelette may seem skimpy, but trust me, with this cheese, less is more. 

Forager’s Omelette
serves 2

2 tsp. olive oil, divided
½ small yellow onion, sliced
5 cremini mushrooms, sliced
1 tsp. fresh thyme leaves
1/4 tsp. salt
2 cups baby spinach leaves
1 tsp. butter
4 large eggs, whisked in a small bowl
fresh ground pepper
2 tbsp. Boursin Garlic + Fine Herb Cheese

In a medium saute pan, heat 1 tsp. of the olive oil over medium heat. Add onions and mushrooms; saute until softened – about 5 minutes. Add thyme and salt. Cook for 1 minute. Add spinach and gently saute for 1 more minute. Remove from heat and pour filling into a strainer – as the filling sit while you are cooking the eggs, the moisture from the mushrooms and spinach will drain out. 

Carefully wipe out the saute pan and over medium heat, melt butter with remaining olive oil. {After you make the first omelette, there should be enough oil left in the pan for the second omelette but add more if needed.} When oil is hot, add half of the beaten eggs to the pan, swirling the pan to spread the eggs out evenly. When they start to firm up, after about 40 seconds, use a spatula to gently push the eggs to the center and tilt pan to move the uncooked eggs to the outer edges. Salt and pepper to taste. Let eggs cook for 2 more minutes then add 1 tbsp. of the Boursin and half the mushroom spinach onion mixture to only one half of the omelette – if you’re looking at the pan with the handle pointed towards you, place the filling on the side toward your dominate hand – you are going to fold the omelette over as you’re plating. Remove from heat and start to slide the omelette onto your serving plate. When you have the half that has the filling on it onto the plate, use the pan to flip the remaining egg half over the the filling side.

meatless . #51 {squash kale lentil soup}

Oy…that bugger Michael gave me his cold. It was inevitable with all the hacking and groaning that’s been going on in our house. Hopefully my plan to curtail this {drinking lots of water, taking dayquil religiously and drinking some theraflu before bed tonight} will work and I’ll awake feeling much better and less congested. Had planned to make a pasta tonight but nothing sounded better as a sickie than soup…and a nice brothy one at that. So I delved deep into several blogs I like and found a recipe on 101 Cookbooks for a Kabocha French Lentil Soup from February 2010.  Not only was the soup delicious I also got to do a little more fridge cleaning.  Added the remaining half bunch of kale that I used earlier in the week for the stuffed pork loin, added vegetable stock which let me finish the open container in the fridge and used the rest of a loaf of french bread which was used for the croutons and on the side warmed with a little salted butter. It was just what the doctor ordered tonight. Who needs chicken soup?! Here’s my adapted recipe.

Squash Kale Lentil Soup
serves 6

Squash
1  large butternut squash {about 1 ½ lbs.}
½ cup water
2 tbsp. olive oil, divided
Kosher salt

Lentils
4 cups water
1 cup lentils, rinsed
6 thin slices of fresh ginger
1 whole star anise
1 tsp. Kosher salt

Soup
1 leek – white and light green part only, quartered then sliced into ½” pieces
1 medium yellow onion, diced
1 large fennel bulb, eighthed then sliced into ½” pieces
2 cloves garlic, minced
2 tsp. Kosher salt
4 cups vegetable stock
½ bunch kale, chopped 
2 pinches red pepper flakes

Preheat oven to 425º. Cut squash in half, scoop out seeds and place cut side up in a roasting dish. Rub squash with 1 tbsp. of the olive oil and sprinkle with salt. Add ½ cup water to the dish and roast for 35 minutes {in a small oven, put the dish in the middle; for a large oven, place in the top third of the oven}.

While the squash is roasting, cook the lentils. In a medium sauce pan, bring 4 cups of water to a boil. Add lentils, ginger, star anise and 1 tsp. Kosher salt. Reduce heat and simmer covered for 30 minutes.

Remove squash from oven. When cool enough to handle, cut squash 2″ cubes by running a paring knife through the squash all the way down until it hits the skin. Then use a large spoon to scoop out the cubes. Set aside.

In a large soup pot, heat remaining olive oil over medium heat. Add leek, onion, fennel and garlic. Reduce heat and cook for 10 minutes or until the vegetables soften. Remove the star anise and ginger from the lentils and add the lentils along with the cooking liquid to the large soup pot. Add the vegetable stock and kale; let cook for 15 minutes. Season with salt, pepper and pepper flakes. Divide into bowls and top with croutons…recipe below.

Thyme Croutons
makes 2 cups

6 slices of day old bread {or baguette}
1 ½ tbsp. melted butter
1 tsp. dried thyme
salt and pepper

Preheat oven to 400º. Cut bread into 1″ cubes. Mix butter and thyme in a small bowl. Salt and pepper to taste. Toss bread in butter mixture then make 1 layer on a baking sheet. Bake croutons for 5 minutes or until they just start to turn golden  brown. Remove from oven and let cool.

{2011} a year of incredible memories

2011 is quickly coming to a close. It’s been quite the year.
This is where I’ve stopped and rewritten the next paragraph four times trying to capture everything that happened in 2011 without making this a depressing year-end post. When you look back, for many of us, the “sad events” immediately come to mind. The people who’ve passed are the thoughts for me that come first. Inevitably I cry. Catastrophes, unplanned events, things that threw a wrench in our lives. We’ve all had loss and pain this year, like every year. It seems so trite to say, but that’s life. After remembering all these events, slowly but surely the happier moments revive themselves. What I’ve learned over the years is that the times in your life where you feel loss and pain make you appreciate all the other days even more. That’s why every day, even a hurtful, tough one, is important. The greatest gift I got throughout the year was being able to spend so much time with my family and close friends. As I look back on 2011, I mostly smile. I’ve learned to cherish each day; even the challenging  ones. It was a truly a year of making lasting memories.
